OK, now I’m just playing around. I’ve been trying to mess around with my plating, and craving poke–all at once. It was still winter when I made this, and Dani and I were binging “Life Below Zero” to see how all the families prepared for winter in Alaska. Maybe even wishing for those -30 degree mornings for a little too–out of curiosity. I gained a new respect for smoked salmon, and decided to use it instead of other seafood this time around.
Poke is supposed to remind you of the tropics, though, so I made a quick sauce one not one- or two- but three citrus fruits. Throw in some crispy sesame rice cakes, fried shallots, pickled ginger, and avocado, and you’re in business.
